Here at Insomnia, we’re proud to be an indigenous 100% Irish owned coffee company. It is part of our strategy and customer promise to source locally where possible. With this in mind we would like to introduce to our customers, one of our suppliers each week and give you the chance to recreate at home one of their scrumptious treats, available now as part of the new Autumn range.
This week we would like to introduce you to our suppliers from Soup Café , Ian and Mairin who have been supplying soup to Insomnia since 2003. After we tell you a bit about Soup Café we will let you in on the secret to making their delicious soup at home.
Ian Davage & Mairin Coleman of Soup Café
Ian & Mairin have been making soup since 2001 and have been supplying Insomnia since 2003.
There message is simple, Mairin say’s “We love all types of international cuisine and make soups of all the well know dishes and more. Ian checks each variety and none of them leave his kitchen if he feels they aren’t up to his high standards. They are delivered to Insomnia fresh everyday”
Roasted Butternut Squash and Red Pepper Soup
Ingredients (serves 4)
- 2 tbs sunflower oil
- 1 diced onion
- 1 chopped celery stalk
- 1 sliced red pepper
- 1 chopped carrot
- 2 potatoes cubed
- 1 butternut squash
- 1 litre vegetable stock
- 1 tbs ground cumin
- salt and pepper to taste
- Peel and seed the butternut, cut into cubes and roast in the oven with red pepper and a little oil (180 degrees C) until tender.
- In a pot gently fry the onion and celery in oil until soft. Add the cumin, carrot, potato, roasted butternut and red pepper, and enough of the vegetable stock to cover the vegetables. Bring to the boil, reduce heat to low. Cover the pot, and let simmer for 40 minutes or until the vegetables are tender.
- Transfer the soup to a blender and blend until smooth. Return to the pot and mix any remaining stock to attain desired consistency. Season with salt and pepper to taste.
