Company History

Insomnia (RedCoral Catering Ltd) is the largest leading independent premium coffee and sandwich retail chain in Ireland.

The company was established in 1997 by four Irish independently successful entrepreneurs who identified an opportunity to exploit the rapidly growing market for premium gourmet coffee. The first outlet was opened in Galway and, over the next four years, six outlets were opened in the Dublin area.

In 2002, the Company acquired the Bendini & Shaw sandwich chain to provide a complementary sandwich and food product to its premium coffee. A further acquisition of the Perk chain of coffee shops took place in October 2005.The Company now has 42 outlets, included in this are partnerships with Spar, Meadows & Byrne and Gardenworks.

In December 2007, The Penninn Group purchased a 51% majority stake in the privately owned coffee company. Penninn is a major Icelandic based diversified group with interests in retail, coffee roasting and distribution, office supplies and book stores. The shareholders of Insomnia retain a 49% stake and are actively involved in managing and developing the business. Plans are at an advanced stage to open a further 25 outlets in 2008.

Each Insomnia location offers a relaxed atmosphere where their experience is enhanced by the hand crafted coffee of their choice complimented either by one of our freshly made gourmet sandwiches or delicious pastries.

Our Coffee

Our philosophy is simple; you will get the best cup of coffee, in whichever format you choose, every time you visit your stores. Our unique blend of Fairtrade and Organic coffee is specially roasted for us weekly. The shorter the time between roasting and serving, the fresher, smoother and fuller flavoured the taste.

Our Sandwiches

Our commitment to quality and excellence is continued in our sandwiches. Every sandwich is handmade individually using local ingredients ensuring that the food we sell is fresh, healthy and of the highest standards. We have over 25 different varieties of sandwiches on a selection of nine different breads, something to suit every taste.

Our Pastries, Desserts and Bagels

To compliment our coffee at any time of the day, we have a wide selection freshly baked bagels, pastries and delicious desserts that are delivered daily. We can not do everything ourselves and so stick to what we are good at and work with a carefully selected group of suppliers who meet are high standards of excellence.

Our Gourmet Panini’s – A Taste of Italy

We have a comprehensive range of gourmet Italian Panini’s. We have completely redesigned our menu and replaced the more traditional ingredients with a selection of gourmet Italian meats and cheeses served on a rustic style ciabatta. The combinations are truly mouth watering!

Our Soups

We have recently introduced a delicious range of gourmet soups made for us daily by the Soup Café. They are made from all natural ingredients and are very low in fat. We offer six varieties daily and they are served with fresh bread and butter. These are truly unique soups of which the meaty ones are more like a casserole than a soup.
