Our Favourite Pineapple Upside Down Cake Recipe

INGREDIENTS

FOR THE TOPPING

50g Softened Butter

50g Light Soft Brown Sugar

1 tin of Pineapple Rings (approx. 7 rings)

Glace Cherries

FOR THE CAKE (ALL IN ONE MIX)

100g Softened Butter

100g Golden Caster Sugar

100g Self Raising Flour

1 Teaspoon Baking Powder

1 Teaspoon Vanilla Essence

2 Whole Free Range Eggs

2 Tablespoons of Pineapple Syrup

METHOD 

1. Preheat your oven to 180Β°C

2. For the topping, cream together 50g of softened butter with 50g of light soft brown sugar until smooth and light.

3. Take a non-stick 20cm diameter cake tin and spread this mix over the bottom of the tin.

4. Drain the pineapple rings and save the juice.

5. Neatly arrange the drained pineapple rings in the tin on top of butter

and sugar mix and place the glace cherry in the centre of the rings.

6. Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 teaspoon of baking powder, 1 teaspoon of vanilla extract and 2 eggs and 2 tablespoons of the pineapple syrup into a bowl and whisk using an electric mixer until a soft consistency.

7. Gently spoon the mixture on top of the pineapples and cherries and smooth it out with a palette knife

8. Place the cake in the oven and bake for approximately 35 minutes.

9. Allow the cake to cool for 10 minutes and then turn out onto a plate.

10. Serve with cream or ice cream.
