225g Plain Flour (plus a little extra for dusting)
2 tsp Bicarbonate of Soda
1 tsp Ground Ginger
75g Irish Butter
100g Soft Brown Sugar
100g Golden Syrup

1. Pre heart the oven to 180C
2. Line a baking tray with greaseproof paper
3. Gently melt the butter, sugar and golden syrup in a pan and set aside.
4. Sieve all the dry ingredients into a large bowl
5. When the butter mixture has cooled a little combine it with the dry ingredients and mix into a smooth dough, wrap in greaseproof paper and chill for 30 minutes
6. Lightly dust the surface with flour and roll out the mixture to 5mm to 7mm thick
7. Cut out the gingerbread shapes and gently place onto the tray with the baking parchment
8. Bake for around 15 minutes.
9. Cool the biscuits on a cooling rack
10. Make the icing by combing the icing sugar with a little water
11. Put the icing into a piping with a thin nozzle
12. Decorate with water icing and whatever else you fancy
