This year our Christmas cups were designed by renowned Irish artist, Fuschia Macaree. Inspired by Christmas activities with family and friends including bringing the Christmas tree home, going Christmas shopping and iceskating with friends. Christmas is the best time of the year for catch ups, days out together and making that extra effort to spend time with the ones you love so why not catch up over one of our delicious seasonal coffees to unwind from the festive activities.

We're dreaming of coffees and cakes this Christmas and we know that there’s at least one of Insomnia's Christmas drinks are on everyone’s wish list. To make your Christmas wishes come true and to keep you energised while you do your Christmas shopping our Christmas drinks menu includes the Gingerbread Latte/Cappuccino, Butterscotch Latte/Cappuccino, Golden Caramel Hot Chocolate and Red Velvet Hot Chocolate.
Enjoy the flavour of Gingerbread syrup swirled with our signature espresso and velvety milk topped with a small gingerbread biscuit.
Our signature espresso and velvety steamed milk swirled with Butterscotch syrup, topped with cream and a sprinkle of Toffee Crunch.
Golden Caramel Hot Chocolate
Made with luxurious gold caramel belgian chocolate buttons for a magical festive treat. Enjoy the flavours of melted caramel chocolate with rich notes of toffee, butter, cream & an exciting dash of salt. Enjoy topped with a sprinkle of Gold Dust and chocolate flakes.
Red Velvet Hot Chocolate
An indulgent hot chocolate made with melted Belgian chocolate, red velvet syrup and topped with whipped cream and a mini chocolate Christmas tree for a festive drink that even the elves would be jealous of.
Insomnia's Christmas bakery range includes some traditional festive favourites including Mince Pies, Gingerbread People and, of course, our Red Velvet Cake. We've also added some mouthwatering new bakery items to the menu including the Red Velvet Brownie, Chocolate Caramel Tartlets and Christmas Tree Brownies.
Red Velvet Cake
The weather outside may be frightful, but our Red Velvet Cake is oh so delightful. This little taste of heaven is a little bit naughty but a whole lot nice! The vibrant red velvet sponge cake, topped with cream cheese frosting is likely to be on everybody's wish list this Christmas.
Chocolate Caramel Tartlets
Always a seasonal favourite we're bringing you these chocolate tartlets, each with a hidden caramel layer and topped with a glittery snowflake.
Red Velvet Brownie
We’ve combined the best of both worlds in one of the most indulgent treats this season: a chewy and light red Velvet Brownie topped with a frothy White Chocolate ganache, covered with fresh brownie squares and chocolate drizzle. We’re sure you’ll be back for more!
Christmas Tree Brownie
One of our new treats is a delicious fudgy classic chocolate brownie, with a layer of red Christmas and white icing, which will satisfy even the sweetest tooth.
Mince pies made with crisp, golden pastry and filled with rich, fruity mincemeat. Topped with a sweet powdering of sugar, it is the ultimate Christmas sweet treat. Made even better when accompanied by our smooth flat white.
Crumbly gingerbread biscuits finished with hand-iced buttons and Christmas scarf, an ideal treat for cream-scooping and coffee dunking.

You'll feel like you're already sitting around the Christmas dinner table when you try this sandwich - Christmas farmhouse pulled turkey breast, baked ham, sage & onion stuffing, baby spinach, seasonal cranberry sauce on malted brown bread.
Christmas Ciabatta Melt
Enjoy this ciabatta melt with pulled turkey breast, sage & onion stuffing, creamy brie and seasonal cranberry sauce on a seeded ciabatta.

The schools are back, days are getting cooler and the evenings are getting shorter which can only mean that the Autumn season has finally arrived and it's time for some new menu updates at Insomnia. We know you'll want to treat yourself as the seasonal changes kick in, that's why we're thrilled to be releasing some amazing new products this September. Autumn is all about warming up with a hot drinks on a cool, crisp morning, relaxing with a book while sipping on a coffee, catching up with friends after the summer holidays and having a well earned treat after the kids go back to school. Pumpkin Pie Latte & Cappuccino
Made with a double shot of premium Fairtrade espresso, mixed together with our pumpkin pie syrup makes for a spicy, sweet & sippable autumnal hot beverage!
Blackberry Hot Chocolate
Made with melted Belgian milk chocolate and steamed milk, our hot chocolate is one of our most popular hot beverages, and this autumn season see's the introduction of a new flavour - the Blackberry Hot Chocolate. Enjoy your hot chocolate with a berrilicious twist as we blend blackberry syrup through the melted chocolate before topping it up with hot milk. Add marshmallows, chocolate flakes or fresh cream for no extra charge.
Blue Latte (made with Oat Drink)
As always we like to keep a little surprise up our sleeve, and this September we want to introduce you to the Blue Latte. Made with Oatly, an oat-based, dairy-free milk alternative. The blue comes from a blend of butterfly pea flower powder, ginger and coconut blossom sugar, while the Oatly brings through a rich, oaty flavour. The Blue Latte is caffeine and dairy-free, making it a drink you will want to sit with, sip and enjoy.
This indulgent treat has a soft biscuit base loaded with caramel, drizzled with caramel and small caramel chunks to top it off. It's every caramel lover's dream!
Caramel & Pretzel Fudge Bar
Made with an oat base, fudgey centre and pretzels on the top for a bit of a crunch these caramel and pretzel fudge bars are a sweet, filling treat new to the menu this Autumn.
Apple & Blackberry Tartlet
There's nothing like a freshly baked apple pie in the Autumn and we've gone one better for you this year. These mini apple and blackberry tartlets are a classic autumnal bakery delight and perfect for an afternoon treat. Inside the soft, crumbly pastry you'll find a sweet blend of apple and blackberry filling, powdered with icing sugar to finish.

A journey in every cup
Every year we pack up, go out and find you a new single origin coffee, roast it medium and with heaps of respect. This year we went to Cooperativa de Caficultore de Manizales, a cooperative of 4054 coffee farmers in Colombia’s Green Mountains. Just one sip and you will be transported there too.

The Cooperativa de Caficultores de Manizales is a coffee producer organization founded in 1960 as the commercial partner and business representative for over four thousand members in the municipalities of Manizales, Chinchina, Manzanares, Neira, Samana, Victoria, Palestina, Marquetalia, Villamaria, Marulanda and Pensilvania in the Department of Caldas, Colombia.
The organization offers a variety of services based on the principles of cooperative participation and competitiveness. It aims to provide farmers with fair prices and to have a positive effect on each member’s quality of life as well as for their families and the rural communities in which they live.
As of August 2013, ninety-three percent of members are small landowners who work independently and whose total income is dependent on agricultural activity. At least half of the organization’s coffee is sold as Fair Trade, all of which is produced by farming families from eleven municipalities within Colombia’s Caldas Department in the central west.

Health Care: Cardiovascular Risk
Many rural producers in the coffee business suffer from cardiovascular health issues. Manizales is using premium dollars to help reduce these heath issues from arising and affecting producers and their direct beneficiaries. Additionally, these routine check ups are the most effective way to test rural producers for cancer.
Promoting Women’s Empowerment
The committee of coffee producers is using Fair Trade premiums to increase awareness and gain support for women’s initiatives in the area. Through these programs, there will be an increase in women’s participation in the leadership of the organization. Women will be trained in the processes of management, human resources, empowerment, and coffee business.
Technical Assistance and Pest Mitigation
Environmental Management is of the utmost importance to producer members. Since fertilizers are used on the coffee plants, worker safety is a top priority. All producers are given suits to wear, and they learn about the health risks associated with these chemicals. The General Assembly took another precaution and mandated routine checkups to those providing these applications.
Medium Roast - is both balanced with acidity and sugar. Sugar is more pronounced. Increasingly more popular, starting to see on the high street.
What does it taste like?
It has notes of dark chocolate, malt, red fruit and a little squeeze of grapefruit.
It is recommended that it is served as a 8oz or 12oz cup.
A 16oz cup may lose the flavour of the coffee.
What is the difference between a blend and single origin?
Is made up of coffee from 1 origin. A single origin coffee offers only the flavour of that particular coffee, is less complex in flavour than a blend. It has to have a well rounded and balanced experience in all sensory areas:

This offers a very different experience from the core coffee – a coffee that purists will appreciate, as this is not your current customer, it offers an alternative to broaden your consumer base.
Is a combination of coffee’s. A blend will bring together a combination of coffee’s that offer collectively the above experiences.
